Chocolate Peanut Butter Goodness


Three words. Best. Bars. Ever!

Glazed Peanut Butter Bars
3/4 cup butter, softened
3/4 cup creamy peanut butter
3/4 cup sugar
3/4 cup packed brown sugar
2 eggs
2 teaspoons water
1-1/2 teaspoons vanilla extract
1-1/2 cups all-purpose flour
1-1/2 cups quick-cooking oats
3/4 teaspoon baking soda
1/2 teaspoon salt

Glaze
1-1/4 cups milk chocolate chips
1/2 cup butterscotch chips
1/2 cup creamy peanut butter

Preheat oven to 325 degrees. In a large bowl, cream the butter, peanut butter, and sugars until light and fluffy, about 4 minutes. Beat in the eggs, water and vanilla. Combine the flour, oats, baking soda and salt; gradually add to creamed mixture.
                              
Spread into a greased 15-in. x 10-in. x 1-in. baking pan.


Bake for 18-22 minutes or until lightly browned.
For glaze, in a microwave, melt chips and peanut butter;

stir until smooth.

Pour over warm bars;

spread evenly.

Cool completely on a wire rack before cutting. 

Yield: 4 dozen bars.


I've been making these scrumptious bars for many years now and they are still one of my favorites! They will not disappoint.

S'more Bars

These scruptous bars are filled with chocolate chips and marshmallows, making them similar to those yummy campfire treats. Plus, they're big. Big and beautiful.


Chocolate Chip Marshmallow Bars

1 cup shortening
3/4 cup sugar
3/4 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
2-1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups miniature marshmallows
1-1/2 cups semisweet chocolate chips
3/4 cup chopped walnuts (optional)

Preheat oven to 350 degrees. In a large bowl, cream shortening and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well. Stir in the marshmallows, chips and walnuts.


Spread into a greased 13-in. x 9-in. baking pan.


Bake for 25-30 minutes or until golden brown.



Cool on a wire rack. Cut into bars. Yield: 3 dozen.

Brownies 2 Ways!

Another brownie post? You bet! These brownies are a perfect treat for a busy summer day! They are easy to make and easy to eat. Plus they are yummy!


No-Fail Brownies

1/2 cup margarine
3/4 cup cocoa
4 eggs
1/2 teas. salt
2 cups sugar
1 teas. vanilla
1 cup flour (Add 1/4 cup when in high altitude)
Caramel bits, optional

Preheat oven to 350 degrees. Cream margarine and cocoa; add eggs gradually. Beat in salt, sugar and vanilla. Add flour and mix well.


Pour into greased 9x13x2 in. pan.

Bake for 25 minutes.


Now you can always just leave your brownies plain. Plain and simple. But if you want to have some fun with your brownies, here's what to do.


Yep. Caramel bits.


Imediately sprinkle bits over hot brownies. Simple as that.


Of course for the non-caramel people in my house, I had to leave one half plain.


When cool, cut into bars.

So which would you rather? Plain chocolately goodness?

Cookie Dough Brownies

Love brownies? Love cookie dough? Then these are for you!


Cookie Dough Brownies

1 cup semisweet chocolate chips
1/2 cup butter or margarine, softened
1 cup sugar
3 eggs
1 teas. vanilla
1 1/4 cups flour
1/4 teas. baking soda
3/4 cup chopped walnuts, optional

Cookie Dough Layer

1/2 cup butter or margarine, softened
1/2 cup packed brown sugar
1/4 cup sugar
3 Tabl. milk
1 teas. vanilla
1 cup flour
1 cup semisweet chocolate chips

Preheat oven to 350 degrees. In a microwave-safe bowl, melt chocolate chips. Cool slightly. In a mixing bowl, cream butter and sugar. Add eggs and vanilla; mix well. Stir in melted chocolate. Combine flour and baking soda; add to batter. Stir in walnuts.


Spread into a greased 13-in. x 9-in. baking pan. Bake for 16-22 minutes or until toothpick inserted near the center comes out clean. Cool on a wire rack.



Now for the cookie dough.

In a mixing bowl, cream butter and sugars. Beat in milk and vanilla. Gradually add flour. Stir in chocolate chips.


Drop by tablespoonfuls over cooled brownies; carefully spread over top.


Cut into squares. Store in refrigerator. Yeild: 4 dozen.


These rich, chocolatey brownies are definitely my favorite! Try them, and see if you agree!
