Oatmeal Sandwich Cookies

Here's a recipe for some yummy oatmeal sandwich cookies!


Oatmeal Sandwich Cremes

3/4 cup shortening
1 cup sugar
1 cup packed brown sugar
1 egg
1/4 cup water
1 teaspoon vanilla extract
1-1/2 cups self-rising flour-Note: As a substitute for each cup of self-rising flour, place 1-1/2 teaspoons baking powder and 1/2 teaspoon salt in a measuring cup. Add all-purpose flour to measure 1 cup.
1 teaspoon baking soda
1 teaspoon ground cinnamon
3 cups quick-cooking oats
3/4 cup raisins (optional)

FILLING:

1/2 cup butter, softened
1/2 cup shortening
3-3/4 cups confectioners' sugar
2 tablespoons milk
1 teaspoon vanilla extract
Dash salt

Preheat oven to 325 degrees. In a large bowl, cream shortening and sugars until light and fluffy. Beat in the egg, water and vanilla. Combine the flour, baking soda and cinnamon; gradually add to creamed mixture and mix well. Stir in oats and raisins.


Drop by tablespoonfuls 3 in. apart onto ungreased baking sheets. 


Flatten with a glass.


Bake for 13-14 minutes or until lightly browned. Remove to wire racks to cool.


In a large bowl, combine filling ingredients; beat until smooth.


Spread filling generously on a cookie...


...and top with another cookie to make a sandwich.


Makes 2-3 dozen cookies, depending on how big you make them.



These are a nice change from the normal chocolate sandwich cookie. Also, the filling is amazing!

Soft Chocolate Marshmallow Sandwich Cookies

Only three words for these cake-like cookies: Soft, chocolatey, and deeeeeeelicious!

Soft Chocolate Marshmallow Sandwich Cookies

Cookies
1/2 cup shortening
1 cup sugar
1 egg
1/2 cup cocoa
2 cups flour
1 1/2 teas. baking soda
1/2 teas. salt
1 cup milk
1 teas. vanilla
Filling
3/4 cup (1 1/2 sticks) butter, softened
1 1/3 cup powdered sugar
1 cup marshmallow creme
1/2 teas. vanilla

Preheat the oven to 400 degrees. In a large bowl, cream the shortening, sugar, and egg until creamy. Add the cocoa. Combine the flour, baking soda, and salt. Add the milk and vanilla.


Drop dough onto ungreased cookie sheet. Bake for 8 to 10 minutes.
While baking, combine the filling ingredients in a medium-sized bowl and beat until smooth and creamy.


Remove the cookies to wire racks and cool completely.


Frost the flat side of the cookies with the filling and put the remaining cookies on top, making sandwiches. Makes about 24 sandwich cookies.
